Change up your wrap routine with these fun folded rice-and-bean quesadillas. Each quadrant of a whole wheat tortilla is slathered in scrumptious Tex-Mex ingredients and stacked on top of each other to create a perfectly balanced, hand-held snack. Creamy black beans get a spicy kick from chili powder, brown rice soaks up the tangy flavors of pico de gallo, homemade guacamole gets lightened up with mashed peas, and fresh spinach adds leafy green goodness to each bite. This is a great meal when you’re in a rush or need something cute and quick to pack into your kid’s lunchbox. Serve with extra pico de gallo or hot sauce, and chow down!

Yield: Makes 4 quesadillas
Time: 15 minutes
  • ¾ cup frozen green peas, steamed until very tender
  • ½ of a medium ripe avocado, seeded, peeled, and quartered
  • 1 cup no-salt-added black beans or pinto beans, rinsed and drained
  • 1 tablespoon unsweetened, unflavored plant-based milk
  • ½ teaspoon chili powder
  • 4 7- to 8-inch whole wheat flour tortillas
  • 4 teaspoons nutritional yeast
  • ¾ cup cooked brown rice
  • ½ cup purchased pico de gallo (fresh salsa)
  • 1 cup shredded fresh spinach
  • 3 tablespoons sliced black olives

Instructions

  1. Put peas and avocado in a small bowl; mash them with a fork until mostly smooth. Put beans, milk, and chili powder in another small bowl; mash them until mostly smooth.
  2. Lay a tortilla on a work surface. Make a cut in tortilla from the center to the edge closest to you. Imagine the tortilla divided into four equal sections. On the bottom left section, spread one-fourth of the avocado mixture and sprinkle it with 1 teaspoon of the nutritional yeast. On the top left section, spread 3 tablespoons of the rice and top it with 1 tablespoon of the pico de gallo. On the top right section, spread ¼ cup of the spinach and top it with one-fourth of the olives. Finally, on the bottom right section, spread one-fourth of the mashed beans.
  3. Fold the avocado section over the rice. Fold that portion over the spinach. Finally, fold the three sections over the beans. Repeat to make three more folded tortillas.
  4. To cook, put a large nonstick skillet on a burner. Turn the burner  to medium. When the skillet is hot, carefully place two quesadillas in the skillet. Cook about 2 minutes or until quesadillas are golden brown on the bottom. Use a pancake turner to carefully flip quesadillas over. Cook 2 minutes more or until the other side is golden brown. Remove from skillet. Repeat with the remaining quesadillas. Serve quesadillas with the remaining ¼ cup pico de gallo or salsa.

  • 1 cup dry quinoa, rinsed and drained
  • 6 corn tortillas

  • 2 medium avocados, peeled, seeded, and chopped

  3. In a large bowl combine the next five ingredients (through lime juice); mix well. Stir cilantro into cooled quinoa. Spoon bean mixture and quinoa into tortilla bowls. Sprinkle lightly with chili powder and salt.

Onion rings are, not surprisingly, at the top of my craving must-haves list! With salt, onion powder, and a bread crumb coating, they’re crunchy and delicious, and in no way need to be fried to be amazing. Sometimes I’ll make a meal of just onion rings—I’m not ashamed to admit it!

Yield: Makes 18 onion rings
  • ½ cup whole wheat flour, oat flour, or rice flour
  • ¼ teaspoon sea salt
  • ¼ teaspoon garlic powder, plus more as needed
  • ¼ teaspoon onion powder
  • Freshly ground black pepper
  • 1 cup panko bread crumbs (gluten-free or regular)
  • 1 large Vidalia or other sweet onion, sliced into ½-inch-thick rings (about 18)
  • Ketchup, for serving (optional)

Instructions

  1. Preheat the oven or an air fryer to 425°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, salt, garlic powder, onion powder, and a pinch of pepper. While whisking, slowly add ½ cup water and whisk until well combined. Place the bread crumbs in a shallow dish and set them next to the batter.
  3. Working with one at a time, dip an onion ring into the batter to coat, allowing any excess to drip off, then dredge it in the panko. Place the battered onion ring on the prepared baking sheet and repeat to coat the remaining onion.
  4. Bake for 15 to 20 minutes in the oven or 12 to 15 minutes in the air fryer, until golden and crispy. If you like, season the onion rings with more garlic salt, then enjoy with ketchup, if desired.

  2. For vegan cheese filling, in a small saucepan combine ½ cup of the milk and the agar; mix well. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes, stirring frequently. Remove from heat. Let cool 5 to 10 minutes.
  3. Transfer milk mixture to blender with potatoes. Add the remaining ¼ cup milk, the nutritional yeast, 1 tablespoon of the lemon juice, 2 of the garlic cloves, ½ teaspoon of the salt, and ¼ teaspoon of the black pepper. Cover and blend until very creamy. Stir in corn and jalapeño.
  4. Carefully pour blended mixture onto a large baking sheet in a layer no more than ½-inch thick; let cool. Cover tray in plastic wrap; freeze 1 hour or until cheese is set.
  5. In a food processor combine green beans and onion; pulse until very finely chopped. Transfer to bowl with mashed potatoes. Place spinach in food processor; pulse until very finely chopped. Transfer to bowl with mashed potatoes. Add bread crumbs, almond flour, Italian seasoning, and the remaining 2 tablespoons lemon juice, 6 garlic cloves, 1 teaspoon salt, and ¼ teaspoon black pepper. Mix well to combine.
  6. Preheat oven to 350°F. Line a baking sheet with parchment paper. Remove cheese from freezer.
  7. Roll ¼ cup of potato-spinach mixture into a ball. Flatten to a 4-inch disk between your palms. Place 1 tablespoon of the cheese in the center, then fold the edges of the disk toward the middle to enclose cheese; roll into a compact ball. Place ball on prepared baking sheet. Repeat with remaining potato-spinach mixture and cheese.
  8. Bake 20 minutes. Remove from oven and let cool 5 minutes. Flip balls over and return to oven. Bake 20 minutes more. Serve immediately with warm marinara.

The starchy texture of the chickpeas gets delightfully creamy in the blender, achieving a chocolate pudding–like consistency. Serve with fresh fruit such as strawberries, bananas, apples, or pineapple, and you have a delectable healthy chocolate hummus that both kids and adults will want to devour.

Yield: 1⅓ cups
  • 1 15-oz. can no-salt-added chickpeas, rinsed and drained (1½ cups)
  • ¼ cup unsweetened cocoa powder
  • ¼ cup pure maple syrup

  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
